I LOVE lamb curry, its by far my most favourite meat to use in a slow cooker curry. For this i used diced lamb shoulder, the fat in the meat is absolutely beautiful when slow cooked it renders down and becomes so beautifully tender. I fried the diced lamb shoulder in a pan with curry powder and chilli powder and popped in the slow cooker with a Balti sauce pot (available at Roy Blyth). I then fried up some mushrooms, peppers and onions in the same pan and added them to the slow cooker. I cooked on high for 4 hours and then let it sit until the next day. I then reheated and added spinach and it was delicious!
